Eric’s Buffalo Wing Recipe – This is good stuff!!!

Zero carbs for all you Atkins dieters!

Ingredients: Chicken wings, butter, Frank’s Red Hot Sauce, Frank’s Buffalo Wing Sauce, salt, black pepper, granulated garlic powder, paprika, oil for frying (we use canola)

1. Bring your wings to room temperature. If they were frozen, you can defrost them in the microwave. Buffalo wings are very forgiving. Drain any excess liquid and pat them dry with a paper towel

2. Lay the wings out on a tray and sprinkle them with salt, black pepper, granulated garlic and paprika. You can apply the spices pretty liberally. Pat them into the chicken, then turn them over and repeat.

3. Heat the oil in your Delonghi Roto-Fryer to 360 degrees, then add the wings. You can cook up to 10-14 at a time depending on the size. Don’t overload the fryer – the wings will stick together and won’t get as crisp. If you don’t have a Delonghi Roto-Fryer, order one from right now!

4. Cook until they get golden brown and crispy. This usually takes around 8-10 minutes. It can be a little more of less, depending on how much chicken you put in the fryer.

5. While the chicken is cooking, melt some butter in the microwave. A couple tablespoons is plenty for a dozen wings.

6. Once the chicken is cooked, raise the basket in the fryer and give it a minute or so to cool and drain. Put the chicken in a large bowl and add the butter. Toss the chicken just enough so it gets coated. Do not over toss. You’ll lose the crispiness!

7. Once the chicken is buttered, add ¼ cup of Frank’s Red Hot Sauce and ¼ cup of Franks Buffalo Wing Sauce. Toss some more, put them on a platter, serve ‘em and start making more because they’ll go fast. You can re-use the butter/sauce that’s left over on your next batch.

A couple notes:

I use Frank’s sauces because they taste good and don’t have a lot of junk in them. They also have no carbs. A lot of other sauces have carbs – probably due to all the junk in them.

Wings prepared with equal amounts of hot sauce/wing sauce will be reasonably hot, but not crazy hot. For milder wings, use more wing sauce and less hot sauce. For hotter wings use a higher proportion of hot sauce. When we’re feeling especially bold, we use the hot sauce straight.

Sam’s Club has the best deal on frozen wings. A 10lb bag is around $10. That’ll give you enough wings for 4-5 normal servings, or 3 gluttons.
