New food service emphasizes freshness and selection

T he new management firm for the cafeteria says patrons will begin to see changes by mid-January.

By that time, Sodexho Marriott says that you will notice small changes like salt and pepper shakers and flower arrangements on the tables. Early next month representatives of the new management will be on hand at a table in the cafeteria with free cookies to conduct an employee preference survey. "We think customer first," said Nathaniel McLaughlin, Sodexho Marriott district manager. "We want to

be a partner with KUMC, not a vendor."

In about a month and a half, the serving system will change to provide you with freshly cooked foods. Within three to six months, the Crossroads Cuisine program will be implemented, incorporating many food trends available in restaurants, regional recipes and gourmet creations. Among the selections that will be available: ? Selona Grill, featuring burgers,

chicken sandwiches and specialty

sandwiches. ? Charleston Market, offering down-

home favorites and comfort food. ? Fresh Inspirations is a salad bar with

prepared salads, meats and seafood. ? Copper Pot provides freshly

prepared soups, breads and chili. ? La Vincinta allows you to create

custom pizzas and pasta dishes. Other changes will include some

cafeteria construction, d?cor changes and improved traffic flow. These changes will be phased in over the next year and a half.
